HEIRLOOM. Indeterminate. The classic Italian paste tomato with rich, complex, sweet flavor essential for making traditional sauces and whole canned tomatoes. The large plants produce loads of small, elongated red tomatoes late in the season and need to be staked. Almost no seed cavities-all meat. The long, blocky fruits mature with a small, discreet seed cavity that can be scooped out, leaving all meat. This means much less boiling to get a first class paste. The shape is also good for canning, and excellent for drying. Fertilize when first fruits form to increase yield. Water deeply once a week during very dry weather.
